Visite guid\u00e9e dans les serres de la ferme \u00e0 l&rsquo;Arbre.<\/p>\n\n\n\n<p><strong>Un chicon moins amer et plus tendre<\/strong><\/p>\n\n\n\n<p>Michel Paque, le directeur de la Ferme \u00e0 l\u2019Arbre de Li\u00e8ge, et son mara\u00eecher, Philippe Altmann, ont relanc\u00e9 une technique ancestrale. RTBF &#8211; Philippe Collette<\/p>\n\n\n\n<p>C\u2019est un chicon diff\u00e9rent que la Ferme \u00e0 l\u2019Arbre de Li\u00e8ge vient de relancer dans ses serres. Pour Michel Paque, directeur de la ferme, le chicon de pleine terre, c\u2019est autre chose: <em>\u00ab\u00a0C&rsquo;est un produit excellent, qui n&rsquo;a pas du tout le m\u00eame go\u00fbt que le chicon hydroculture ou le chicon de terreau parce qu&rsquo;il est beaucoup plus go\u00fbteux, il est moins amer, plus tendre, plus serr\u00e9, donc c&rsquo;est un produit exceptionnel et qui n&rsquo;est plus cultiv\u00e9.\u00a0\u00bb<\/em><\/p>\n\n\n\n<p>La Ferme \u00e0 l\u2019Arbre a donc repris la culture du chicon \u00e0 l\u2019ancienne,&nbsp;une technique plut\u00f4t rare de nos jours, dont se charge le mara\u00eecher de la ferme, Philippe Altmann: <em>\u00ab\u00a0Il faut d&rsquo;abord vider la terre, et puis, quand on a enlev\u00e9 la terre, on arrange les racines les unes \u00e0 c\u00f4t\u00e9 des autres, en les s\u00e9parant chaque fois par une couche de terre. On inonde les chicons pour qu&rsquo;ils aient une r\u00e9serve d&rsquo;eau suffisante jusqu&rsquo;\u00e0 la fin de leur croissance. On reprend alors la terre qui a \u00e9t\u00e9 enlev\u00e9e et on la recouvre sur les chicons install\u00e9s.\u00a0\u00bb<\/em><\/p>\n\n\n\n<p><strong>Une technique ancestrale<\/strong><\/p>\n\n\n\n<p>Les racines sont donc enfouies dans la terre et recouvertes d\u2019une toile cir\u00e9e car il ne faut pas le moindre rayon de lumi\u00e8re: <em>\u00ab\u00a0Il faut qu&rsquo;ils soient dans l&rsquo;obscurit\u00e9 totale pour ne pas qu&rsquo;ils soient verts. Et s&rsquo;ils prenaient la lumi\u00e8re, ils ne seraient pas mangeables parce qu&rsquo;ils seraient trop amers\u00a0\u00bb<\/em> pr\u00e9cise le mara\u00eecher.<\/p>\n\n\n\n<p>La r\u00e9colte, quant \u00e0 elle, est imminente. <em>\u00ab\u00a0On est tributaire du climat ext\u00e9rieur\u00a0\u00bb <\/em>explique Michel Paque.<em> \u00ab\u00a0On ne chauffe pas, \u00e7a se fait dans la terre, \u00e7a pousse \u00e0 son rythme, mais c&rsquo;est programm\u00e9 fin du mois.\u00a0\u00bb<\/em><\/p>\n\n\n\n<p>Cette ann\u00e9e, c\u2019\u00e9tait un essai: la ferme s\u2019est limit\u00e9e \u00e0 2000 racines.
