Les travaux de scientifiques renomm\u00e9s nous r\u00e9v\u00e8lent de surcro\u00eet que les pommes sont excellentes pour notre sant\u00e9 et que nous pouvons les consommer sans mod\u00e9ration.<\/p>\n\n\n\n<p>Les Anciens se rappelleront certainement les merveilleuses soir\u00e9es d&rsquo;hiver au coin du feu ouvert \u00e0 manger des pommes qui, \u00e0 l&rsquo;\u00e9poque, se conservaient fort longtemps et d\u00e9gageaient un parfum exquis.<\/p>\n\n\n\n<p><strong>Que nous apprend la Science ?<\/strong><\/p>\n\n\n\n<p>Ce vieil adage confirme que la pomme est le symbole de sant\u00e9 par excellence, la pomme a d\u00e9j\u00e0 fait ses preuves concernant ses effets l\u00e9g\u00e8rement hypocholest\u00e9rol\u00e9miants. Ceux-ci sont attribu\u00e9s \u00e0 la proportion \u00e9lev\u00e9e de pectines dans le fruit.<\/p>\n\n\n\n<p>Depuis quelques ann\u00e9es, les recherches se concentrent surtout sur certains flavono\u00efdes aux propri\u00e9t\u00e9s antioxydantes telles que la querc\u00e9tine dos\u00e9e dans la peau de la pomme ainsi que dans les oignons et le th\u00e9.<\/p>\n\n\n\n<p>Les r\u00e9sultats issus de nombreux travaux de laboratoire signalent des propri\u00e9t\u00e9s anticanc\u00e9rig\u00e8nes chez certains flavono\u00efdes, dont la querc\u00e9tine. En effet, ces substances ont la propri\u00e9t\u00e9 de pi\u00e9ger les radicaux libres et sont d\u00e8s lors capables de prot\u00e9ger les structures biologiques des agressions oxydatives. Cette protection int\u00e9ressante pourrait se r\u00e9aliser au niveau des cellules nerveuses selon deux travaux conduits par des chercheurs de la Cornell University, aux USA.<\/p>\n\n\n\n<p>La premi\u00e8re publication, parue dans le Journal of Food Science (novembre-d\u00e9cembre 2004), a compar\u00e9 deux groupes de neurones de rats soumis \u00e0 un stress oxydatif avec du peroxyde d&rsquo;hydrog\u00e8ne. Un des groupes avait \u00e9t\u00e9 trait\u00e9 pr\u00e9alablement avec des extraits ph\u00e9noliques de pomme, selon plusieurs concentrations. Plus la concentration en extraits de pomme \u00e9tait importante, plus les cellules nerveuses \u00e9taient prot\u00e9g\u00e9es du stress oxydatif.<\/p>\n\n\n\n<p>La seconde exp\u00e9rience a d\u00e9montr\u00e9 que l&rsquo;effet protecteur observ\u00e9 \u00e9tait d\u00fb \u00e0 la querc\u00e9tine.
